Baking Soda

Sodium bicarbonate or Baking soda,  is a chemical compound with the formula NaHCO3.

It is a white solid that is crystalline but often appears as a fine powder and has a slightly salty, alkaline taste

Since it has long been known and is widely used, the salt has many related names such as baking soda, bread soda, cooking soda, and bicarbonate of soda.

Sodium bicarbonate, referred to as baking soda, is primarily used in baking, as a leavening agent.

It reacts with acidic components in batters, releasing carbon dioxide, which causes expansion of the batter and forms the characteristic texture and grain in pancakes, cakes, quick breads, soda bread, and other baked and fried foods.

It has weak disinfectant properties, and it may be an effective fungicide against some organisms.

Because baking soda will absorb musty smells, it has become a reliable method for used-book sellers when making books less malodorous.

Sodium bicarbonate can be used to extinguish small grease or electrical fires by being thrown over the fire

Sodium bicarbonate can be used to treat an allergic reaction to plants such as poison ivy,
poison oak, or poison sumac to relieve some of the associated itching.
Bicarbonate of soda can also be useful in removing splinters from the skin.

Toothpaste containing sodium bicarbonate has been shown to have a better
whitening and plaque removal effect than toothpastes without it

Sodium bicarbonate is also used as an ingredient in some mouthwashes.

The juice of the lemon may be used for cleaning.
A halved lemon dipped in salt or baking powder is used to brighten copper cookware.
The acid dissolves the tarnish and the abrasives assist the cleaning.

As a sanitary kitchen deodorizer the juice can deodorize, remove grease, bleach stains, and disinfect; when mixed with baking soda, it removes stains from plastic food storage containers.

The oil of the lemon’s peel also has various uses and  is used as a wood cleaner and polish

Lemon oil and orange oil are also used as a nontoxic insecticide treatment.
A halved lemon is used as a finger moistener.

Lemon oil may be used in aromatherapy.
Lemon oil aroma does not influence the human immune system

Recipe: Delicious Borscht or Beet soup

Beets are a good source of nutrition and can be grown outdoors in your garden. The tops are edible in salad and the root or bulb is used in soups or salads as well. You can also pickle beets which are also very delicious.

Here is a good recipe for Borscht or Beet Soup, it is tasty and nutritious as a meal for any time of the year.


6 fresh beats – Boiled for 30 mins to make tender, cool then slice and set aside.
1 onion diced
2 tablespoons of margarine or butter
5 cups of chicken stock
2 white potatoes (diced, uncooked)
Sour Cream – optional

In a large pot add margarine and onions, cooking on medium heat, until onions are transparent(about 5-10 mins). Add Potatoes, beets and soup stock, simmer for about 25 minutes until the potatoes are tender on low heat.
Serve in a soup bowl with a dollop of sour cream.

Recipe: Vegetarian Cabbage Soup

Vegetarian cuisine is a delicious alternative to eating meat. Adding a vegetarian dish to your weekly meals can also save you money as it helps to increase your healthy eating options. Learning to cook with vegetables is a smart way to develop a new way of eating. If you grow your own vegetables and learn several solid recipes for their use, you can completely go ‘off the meat grid’ and develop an entirely new way of eating and living.

This is a delicious soup recipe that is amazing and can also be frozen in smaller batches to heat for later use. Keep unused portions in the refrigerator if you decide not to freeze but it should be consumed with in a few days time.

Vegetarian Cabbage Soup

2 tablespoons of butter or margarine (also could use sunflower oil or olive oil)
1 onion, chopped
1 stalk of celery, diced
1 green pepper, chopped
1 large can diced tomatoes (or 4 fresh tomatoes diced)
2 large potatoes diced
2 medium carrots diced
8 cups of chopped cabbage
1/4 cup sugar
1 tablespoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
5 cups water
3 garlic cloves crushed
fresh parsley chopped

In a large pot, add the margarine/butter and onions, saute the onions and add everything else EXCEPT the cabbage. Simmer for about an hour on medium-low heat, with out a lid. Add cabbage, stir, cover and simmer for another hour, stirring on occasion. Add salt and pepper to taste. If soup is too thick, thin with a cup of water. Really good with toast or hearty breads.

Recipe: Chicken and Leek Soup

Chicken and Leeks go well together in this delicious soup, it is easy to make, takes a little time to cook but the taste of it is well worth your efforts. Put everything into one pot and keep it on simmer for a few hours. The smells will fill your home and make your mouth water. Amazing all year round but especially good on a cold and wintry day. For larger portions, simply double the recipe and invite friends and family along to share in a wonderful meal together.

Chicken and Leek Soup

2 cups diced chicken(uncooked)
1 dozen leeks chopped
1/cup of rice
8 cups of water
Salt and pepper to taste

In one large pot add all ingredients and simmer on low heat for around 3 hours. Add the salt and pepper for flavour. Must refrigerate unused portions or freeze if preferred. Heat thoroughly before reserving. Goes well with freshly baked bread.

Recipe: Easy Meat Loaf and Baked Potato dinner

Thinking of making a nice meat and potato dinner for your family or just for yourself? This is a delicious and easy to make recipe. The entire meal is prepared in the oven, and will warm the hungriest of stomachs awaiting the aroma that this meal sends through out your kitchen. Here is the recipe for a wonderful meat loaf and baked potato dinner.

Meat Loaf and Baked Potato dinner

2 pounds ground beef
2 eggs
2 teaspoons salt
1 cup ketchup
3/4 cup oatmeal
1 onion diced
1/2 teaspoon Pepper
3 garlic cloves crushed
6 baked potatoes, washed
Salt and pepper to taste

In a medium sized mixing bowl, combine all ingredients, except potatoes, and mix with hands, forming a loaf. Place in loaf pan and top with additional ketchup (1/2 cup) Place potatoes around loaf pan in the hot oven, directly on rack, then bake at 350 F for one hour. Serve a slice of meat loaf with the baked potato, adding butter, salt and pepper to taste. Serves 6

Refrigerate unused portions.

Meatloaf sliced thin also makes a great sandwich for lunch the next day.
